Having a BBQ with the local brothers. They introduced us to Gibnut , locally called the royal rat as it was served to the queen when she came to Belize. Top right on the BBQ (Next to the chicken) …Very enjoyable. Thanks Valdimar and the Costa’s for a super evening.
